Apple Pie Baked Oats

A perfect breakfast, particularly on a rainy day. It’s got all the warming flavours of an apple pie or strudel paired with lots of filling baked oats.

This recipe serves 1 hungry person or 2 people as part of a luxurious brunch with berries, yoghurt and pastries.

The oats bake nicely with the apples leaving some with little crunch and some nicely toasted.

Ingredients

1 apple, finely chopped

Handful of sultanas 

2 tsp cinnamon

20g light brown sugar

50g jumbo oats

300g water

1 tsp mixed spice

1 tbsp white chocolate (you can omit this or sub in vegan white chocolate to make this recipe vegan)

Method

Preheat oven to 200C / 180C fan / 400F / Gas Mark 6.

Mix the finely chopped apple with the sultanas, cinnamon & sugar.

Mix the oats, water and cinnamon in a microwaveable bowl. Heat in microwave on full power for 2 minutes and stir. You want it to be slightly looser than wallpaper paste! If it is too dry add a little extra water.

Mix half the apple mixture into the cooked oats. 

Put half the oat and apple mixture into an oven proof dish - sprinkle over half of the remaining apple mix. Top with the rest of the oats then sprinkle over the rest of the apple and the white chocolate.

Bake for 15 - 20 minutes until the sugar has started to bubble round the edge and the apple on top has browned.
